Recipe for a quick lunch or dinner. I don’t write the exact grammage because you can mix everything to suit yourself. For two strudels, I used 1 1/2 bags of frozen spinach, one whole package of Feta, and one whole package of sour cream.
1. Preheat oven to 200 degrees. Fry the onion and garlic in olive oil. Just a little oil, I put about 2 tablespoons. Add the spinach. If you have frozen, let it thaw first, it will take faster then. If you put unfrozen, you won’t spoil anything, you just need a little more patience 🙂 2. When the spinach is sauteed and the juices have evaporated, add the spices, veggies, you can use different herbs. There are no limits to your imagination, but don’t forget the nutmeg, which will give the spinach the right flavour! You don’t need to salt it much, I would say hardly at all, because the cheese and sour cream will flavour it enough. 3. Add the Feta, cut into small cubes and let it heat for a while so it melts nicely. Remove from the heat and add the sour cream. 4. Divide the puff pastry and roll out. Place half of the spinach mixture on each piece, roll up. Brush with egg wash and sprinkle with sesame or flax seeds. Place in the oven. The strudels can be served warm or cold.
