Spinach soup with egg

ingredients

200 g spinach 30 g butter 30 g plain flour 1 dl milk 1 pk egg yolk to taste salt, water, hard-boiled egg

step

1. Place the washed spinach in boiling water, cook until tender, drain and grind in a meat grinder. Make a roux from the dry-roasted flour and butter, pour in the spinach stock, season with salt and simmer. 2. Add the minced spinach and simmer for a while. Stir the egg yolk beaten in the milk into the finished mixture. Serve with a hard-boiled egg.
