Spinach Souffle

Sweet prepared from chopped steamed spinach, beaten egg yolks with vegetable fat, egg white snow, garlic and semi-coarse flour, baked in the oven, cut into cubes and served in plates covered with soup.

Procedure:
1. Wash fresh spinach in hot water, drain and chop into fine pieces
2. Peel the garlic and rub it with a little salt
3. Divide the eggs into yolks and whites, whip the whites into a stiff snow
4. Beat the yolks with the fat, add the chopped spinach, grated garlic and a pinch of salt
5. Then lightly stir in the stiff snow and sifted flour
6. Spread the mixture into a smaller baking dish, which you have previously buttered and floured
7. Place the baking dish in the preheated oven and bake for about 15 minutes
8. Slice the slightly cooled candle into cubes, divide onto plates, pour the soup over it and serve immediately.
