Spinach pie
ingredients
200 g plain flour 300 g semi-coarse flour 1/2 cube yeast 350 ml lukewarm water 1 teaspoon salt

With the arrival of spring, I always look forward to the young spinach that is a must-have in our kitchen… If I don’t have spinach I can use young spring nettles

Sieve the flour into a bowl, make a well in the middle, crumble the yeast, pour a little lukewarm water and mix with a fork to a slurry, add the rest of the water, salt and knead the dough… cover and let rise for about an hour

Divide the dough into baking sheets (one larger rectangular or 2 smaller round ones)

Filling: wash the spinach, chop finely, cover with boiling water, drain (or use frozen), sauté the spinach in a little lard (oil), add garlic, salt and pepper, let cool… mix sour cream with eggs and add to the cooled spinach, layer the filling on the cake and decorate according to your taste – ham, bacon, cheese… Leave to sour for 20-30 minutes

bake in a preheated oven at 200°C for about 15 minutes, depending on the size of the baking tray and the thickness of the pastry, after baking remove the pie to a wire rack

it is delicious both hot and cold
