Spinach Omelette II

Dough of milk, eggs, mustard and flour, spread with spinach, baked in the oven with cheese.

Ingredients:

240 ml of milk 2 bags of frozen spinach 1 tbsp Dijon mustard 180 g grated cheddar cheese 180 g grated cheddar cheese 40 g coarse flour 8 pcs eggplant olive oil salt

Procedure:

1. In a bowl, whisk the milk with the eggs, Dijon mustard, salt and gradually add the semi-coarse flour and mix into a smooth batter
2. Pour onto a baking tray lined with baking paper brushed with oil and top with the wrung out spinach
3. Place in a preheated oven at 180 °C and bake for 10-12 minutes, then sprinkle with finely grated cheddar and bake for a further 2-4 minutes
4. Remove from the oven, roll up and serve sliced.
