In our freezer, frozen spinach leaves have a stable place and we never run out of homemade eggs in the fridge 🙂 A hearty omelette full of spinach with homemade rye bread served as an extra quick unplanned lunch.
1.
Place the frozen spinach in a pan, cover with a lid and let it thaw.
2.
Slightly simmer, add a little water or evaporate as needed.
3.
Dispose the eggs, season with salt. I make a habit of adding turmeric.
4.
Pour over the spinach. Do not stir, cover and let the egg set.
