Spinach gnocchi with bryndza

On Green Thursday you should eat something green, e.g. Spinach gnocchi and even children who do not like spinach will eat it.

If you use fresh spinach, first steam it with boiling water and then blend it with an immersion blender until smooth. For better blending, add water. It is also a good idea to puree frozen spinach until it is quite fine.

Mix the spinach, egg and flour and add enough water to make a semi-solid batter. Season the dough with salt and let it rest for at least an hour.

Using a food processor, drop the dough into the boiling, salted water. When the gnocchi float to the surface, remove and drain in a sieve.

Serve the gnocchi with bryndza and bacon, but they are also good as a side dish with meat and sauce. In our house we prepare the ones that are not eaten as gnocchi with egg and cucumber salad.
