800 g plain flour 4,5 dl water 1 dl oil 1 pk fresh egg white 42 g fresh yeast 2 KL salt
Filling
650 g spinach fresh 200 g Cow’s cheese in brine 100 g mozzarella
For the spread
1 pk fresh egg yolk 1 tbsp yoghurt
For sprinkling
black cumin/black chervil

Delicious sourdough börek with fresh spinach and cheese Good for lunch, dinner, snack, on its own or as a side dish. This börek tastes always and everywhere

In a bowl mix flour and salt first, then add oil, egg white and yeast mixed in 3dl. Add the remaining liquid progressively as the flour drinks. Make a semi-soft dough, which you knead briefly into a loaf. Let the dough rise for 1h.

Meanwhile, chop the spinach and crumble/shred the cow’s cheese. You can also use mozzarella, you can put 2 packets of that if you want.

Divide the risen dough into 3 parts and roll each part into a rectangle. First put the spinach on the dough , then the cheese and finally the salt. Divide the filling evenly over all 3 doughs Finally roll the dough lightly and place on a baking sheet with parchment paper. Brush the top with the egg yolk-mixed yogurt and sprinkle with the blackberries. Bake in a preheated oven at 180°C for 35-40 minutes
