Spicy prawn nuggets

300 g shrimps 1 pk egg 1 tbsp fish sauce 1 cup plain flour 50 g dried vermicelli 1/4 tsp shrimp paste 3 pk young onion 1 pk chili pepper a little oil for frying 1 pk sweet chili sauce

1. Blend half of the prawns to a smooth paste. Chop the remaining prawns and mix them with the blended paste in a bowl. 2. In a small jug, whisk the egg with the fish sauce and 3/4 cup water. Sift the flour into the bowl and make a well in the centre. Progressively add the egg mixture, whisking constantly, to form a lump-free batter. 3. Soak the vermicelli in a bowl of hot water for 5 minutes. Drain and use scissors to cut them into shorter pieces. Mix with the prawns, prawn paste, spring onions and chilli. Add the mixture to the batter. 4. Pour the oil into the pan and fry the dough with a spoon.
