Spicy Butter Beans

Butter beans and also chopped tomatoes, chilli, corn and onions. All cooked briefly and finally served with fresh bread.

Ingredients:

250 g butter beans 250 g English bacon 400 g chopped tomatoes (can) 100 ml quality ketchup 4 pcs clove of garlic 1 pc small can of sterilized corn 1 pc canned tomato puree 1 pc onions

1 tbsp of Modena balsamic vinegar 1 tbspfat 2 tsp chilli flakes 2 tsp sugar salt

Procedure:

1. Soak the beans overnight in cold water
2. The next day, drain the beans and boil them in new unsalted water until tender for about 50 minutes
3. Heat the lard in a pan, add the diced onion and let it brown
4. Then add the diced bacon and let it fry
5. Add the chopped garlic and let it fry
6. Add the chopped tomatoes, puree, sugar, balsamic vinegar, salt and chilli and let it cook for 10 minutes over a low heat
7. Then add the cooked beans, corn without brine and heat everything through
8.

Recommendation:

Serve with bread.
