Spiced plums, perfect for the sweet tooth

This delicacy can be eaten hot or cold. These are plums simmered in a sugar-spiced broth, served with leaf salad, blue cheese and nuts.

Ingredients:

400 g of plums 250 g of blue mould cheese, eg. Caesar Bleu 100 g of mixed leaf lettuce (here rocket and little red) 1 handful chopped walnut kernels For the syrup: 150 ml of dry red wine 4 tbsp dark balsamic (vinegar) 100 g cane sugar 2 pcs star anise 1 pk 3 cm cinnamon 1 pk cinnamon 1 pk cinnamon 5 cm ginger a little freshly crushed pepper

Procedure:

1. Boil vinegar, wine and cane sugar in a saucepan, add all the spices and squeeze out only the juice from the ginger that you have finely grated in your hand, and of course add that to the saucepan too, cook over a high heat for 5-10 minutes to get the consistency of syrup or thinner honey
2. Put the washed, ripe but firm plums into the fragrant broth, turn down the heat and pull for about 8 minutes, turn the plums with a spoon and lick the spoon carefully and lovingly … Attention… it burns! The plum girls will eventually shed the shame and thus partly the skin
3. Spread the washed and drained salad on plates, put the plums, sprinkle with cheese cubes (alea iacta est …) and nuts coarsely crushed, drizzle with plum syrup and just bubble.
