1. Put the head, hearts and tongue in warm water to boil. Then add the onion, pepper, marjoram and salt. Before bringing to the boil, put the liver in the soup and cook everything until tender. 2. Put the grits, which we cooked separately, some of the chopped meat and tripe into the soup and sprinkle with finely chopped chives. 3. Finely chop the cleaned tongue, heart, liver and head meat and serve with horseradish, ketchup, black bread or horseradish sauce.
