Spelt doughnuts

1 kg plain white spelt flour 200 g granulated sugar 3 pcs egg yolks 6 dl milk 42 g fresh yeast 2 packets vanilla sugarβ 2 KL salt oil for frying

Soft and light as a feather. Surprise yours at home with this slightly healthier version for a change π

First, mix flour, sugar, van.sugar and salt in a bowl with a spoon. Then add the egg yolks and the yeast swollen in 4dl milk. Add the remaining approx. 2dl progressively while working the dough, as the flour drinks. Not all spelt is the same, so you need to add the liquid progressively. Work out a semi-soft dough that is starting to separate from the bowl. Finally, using a little more flour, knead the dough briefly to form a loaf. Dust with flour and leave in a warmer place to rise for 1 hour.

On a floured board, knead the risen dough briefly once more, but only gently π Finally roll out the loaf to 1cm

Then cut out circles of any size with a glass. I wanted the doughnuts to have a dimple after baking, so I pressed a small dimple into each circle with my fingers

Let them proof for 15 minutes

Finally, fry the doughnuts in oil on both sides over medium heat. To make sure that the dimple stays nice even after frying, you have to put the Doughnuts in the oil with the top ( dimple ) side first π After baking, place the doughnuts on kitchen paper to drain off the excess fat

Doughnuts are delicious! Light, soft and beautifully fluffy. They are not greasy at all!Sprinkle them with icing sugar to taste and spread with any jam you like.
