Specle with chives

Cooked nightshades warmed in butter, served sprinkled with chives.

Ingredients:

500 g smooth flour 2 tbsp butter 1 tsp salt 2 handfuls chopped chives 3 pieces

td>eggplant sparkling water

Procedure:

1. Add the smooth flour to a bowl, add the eggs, salt and mix, then add enough sparkling water to make the dough soft and bubbly
2. Bring salted water to the boil in a large pot, then push the dough through a sieve into it, always stirring the water to prevent the speckles from sticking to the bottom
3. Once the dumplings float to the surface, let them boil for 1 more minute, then drain and rinse with cold water
4. Before serving, heat them in a pan with melted butter and sprinkle with finely chopped chives.
