Specle with chives II.

Cooked gnocchi warmed in melted butter and sprinkled with chopped chives before serving.

Ingredients:

2 tablespoons butter 2 handfuls chopped chives cooking water salt For dough: 1 tsp salt 500 g smooth flour 3 pcs egg sparkling water

Procedure:

1. Add the flour to a bowl, add the beaten eggs, salt, mix and then add enough sparkling water to make the dough soft and bubbly
2. Then, in a large pot of boiling salted water, push the dough through a sieve (you can also use a knife to cut off pieces of dough on a chopping board), but always stir them in the water so that the speckles do not stick to the bottom
3. Once the speckles float to the surface, let them simmer for another minute, then drain and rinse with cold water
4. Before serving, heat them in a pan with melted butter and sprinkle with finely chopped chives.
