Speck Dumplings II

Knedlíky prepared from coarse flour, eggs, milk, smoked pork belly, rolls … served with lard.

Ingredients:

500 g of smoked pork belly 300 g coarse flour 100 g bacon 10 pcs rolls 3 pcs eggs 3/4 l milk ground pepper salt water lard green parsley

Procedure:

1. Rinse the smoked pork belly, cook until tender, let cool, bone and cut into small cubes
2. In a frying pan, fry the smoked meat together with the bacon, then add the diced buns and fry everything together
4. Sift the coarse flour, add eggs, salt, pepper, chopped green parsley, milk and make a thin dough, add the smoked meat with the diced buns and let it rest
5. Prepare round dumplings from the dough, cook them in salted water for about 12 minutes
6. Remove the cooked dumplings with a ladle and pierce with a fork

These dumplings are a good accompaniment for dishes with meat and sauce.
