Speck dumplings according to a recipe from South Tyrol

Rodina Kaserer from the farm Niedermairhof uses many of her own products in the preparation of her meals. In winter, for example, you can taste their famous bacon dumplings. But with this recipe you can also prepare them at home.

Ingredients:

1 kg bread for dumplings (stiff white bread) 200 g of pastry 3/4 l milk 8 pcs of egg 2 tbsp wheat flour 1 bundle fresh chives a little oil water salt

Procedure:

Cut the onion into small cubes, place in a bowl and add the finely chopped bacon.

Cut the chives and sprinkle over the bread and bacon.

Mix the milk, egg and salt, pour over the bread and mix well. Add 2 tablespoons of wheat flour and mix again.

Let stand for 15 minutes and then use wet hands to form round dumplings.

Cook the dumplings under a lid for 15-20 minutes.

Recommendation:

Serve the dumplings in beef broth or with a green or cabbage salad.
