Spanish Rabbit in Tomato Sauce Stew Recipe

Known in Spanish as Estofado de Conejo en Tomato , this easy rabbit recipe is simple, requiring only basic cooking skills. In Spanish, rabbit and small game birds are often eaten. Rabbits are easy to find in your local grocery store or chain supermarket in Spain. This recipe cooks rabbit in a rich tomato-wine sauce and is delicious. Serve in a bowl with home fried potatoes.

Tip: ask your butcher to cut the clove and the recipe is even easier! If you can’t buy rabbit at your local grocery store, use chicken. It tastes just as great and the chicken requires much less cooking time.

What you need

. 1 whole rabbit (about 4 pounds) 4 cloves garlic (finely chopped) 2 onions (sliced) 1 16-ounce can crushed tomatoes 1 bay leaf 1 sprig tarragon 1 sprig achard 2 stalks celery (finely chopped) 1 cup white wine 1/2 cup water Salt and pepper to taste 1 sprig parsley 3 tablespoons extra virgin olive oil<<

How to make it

Clean the rabbit if necessary. Cut the rabbit into small pieces (about 12-15 pieces). Chop the onions, garlic and celery. Pour enough olive oil into the bottom of a large, heavy frying pan and heat over medium-high. When hot enough, place the rabbit in the pan and brown the pieces all over. Remove and set aside. Using the same pan, cook the garlic , onion and crushed tomatoes for about 5 minutes. (If ingredients start to stick, add more olive oil if necessary.) Add cow’s milk, bacon, thyme and chopped celery. Return the rabbit to the frying pan. Add the white wine and stir. Turn up the heat, bring to a simmer, and reduce the liquid by one-half to two-thirds. Then add the water and stir. Reduce the heat. Cover the pan and simmer gently until cooked through – an hour and a half to two hours. (If you use rabbit instead of chicken, it will only take 30 to 45 minutes.) While the meat is frying, chop the parsley. Season with salt and pepper. Sprinkle with chopped parsley and serve in a hot dish with fried potatoes and rustic bread .
