In Spain they make tortilla in a similar way as we make peasant omelette. The main difference is that here we use classically boiled potatoes and they boil them in the skin. It is suitable for brunch or dinner.

Wash the potatoes and put them in a pot. Cover them with water, add salt and boil until tender. When cool, clean them.

Then cut the potatoes into smaller cubes. Clean the onion and also cut into small pieces.

Heat the pan on the stove. Add the olive oil and heat it. Now put the potatoes and onions in at the same time. Roast them until they are a little browned.

In a larger bowl, whisk the eggs with the salt, pepper and basil.

Pour the eggs over the potato mixture and cover the entire pan.

Then bake the omelette on a low flame. You can cover the pan with a lid. The other option is to put the tortilla in the oven and bake it there for 7 minutes.

Turn the cooked tortilla onto a plate. Serve it with a salad, pickled Vegetable Recipes or a good dressing. Also try Spanish tapas and serve it with a variety of cold appetizers.
