Spanish PAELLA from Mallorca

3 tbsp olive oil 1 pk small onion 2 cloves garlic 150 g brown mushrooms 1 pk tomato 1 cup spanish rice 1 liter fish stock 250 g seafood (frozen) 2 tsp ground turmeric 4 pk crawfish 2 handfuls frozen peas

We first tasted it in Palma de Mallorca.

In a large frying pan, heat the olive oil and fry the onions, which we have finely chopped, until golden.

Add the sliced garlic and stir.
3.
Add the sliced mushrooms and the tomato that we have diced (peeled).

Simmer for a while.

Add the Spanish rice and sauté everything together.

Pour in a little broth (so that the whole risotto is covered) and simmer slowly until the broth evaporates.

Next, add the seafood and sprinkle with turmeric, stir. Again, pour in a little stock.
8.
Pile the langoustines into the paella, do not stir again.
9.
Rice as needed, so that the rice is al dente.
10.
Finally, add the frozen peas and simmer for a few more minutes.
11.
Serve.
