Spanish cold soup – gazpacho

1 kg tomatoes 1 pk onion 200 g sweet red peppers from the can 2 cloves garlic 600 ml chicken broth 75 ml olive oil 4 tbsp red wine vinegar 2 tbsp lemon juice to taste salt to taste ground black pepper 1/2 pk cucumber 1 pk coloured bell pepper some cherry tomatoes

1. Peel the tomatoes, cut them into larger pieces and remove the seeds. Coarsely chop the onion, peppers and garlic. Place everything in a blender with the stock, vinegar and oil and blend until smooth. 2. Pour the vegetable mixture into a bowl, add the lemon juice, salt, pepper, cover the soup and refrigerate for at least an hour. 3. Garnish the chilled soup with finely chopped cherry tomatoes, cucumber and bell pepper. If you like, you can drizzle a little more olive oil over the soup.
