Ingredients
Spaghetti, 200 g Fresh salmon loin, 350 g Fresh spinach, 100 g Cream cheese, 2 tablespoons Butter, 1 tablespoon Extra virgin olive oil, 1 tablespoon Small onion, 1 teaspoon Salt Pepper
Step 1
Cut the salmon loin into cubes and season to taste. Heat half a tablespoon of olive oil in a frying pan and sauté the salmon cubes for one minute and set aside.
Step 2
In the same frying pan put the rest of the oil and butter, heat it and fry the finely chopped spring onion with a pinch of salt.
Step 3
Put the water on to boil and, as soon as it starts to boil, add the pasta and let it cook for the time indicated by the manufacturer.
Step 4
When the spring onion is tender, add the washed spinach and sauté for two or three minutes.
Step 5
Add the cream cheese, mix well and add the salmon pieces. Mix everything together and set aside until the pasta is ready.
Step 6
Pour the cooked spaghetti into the pan with the salmon, mix everything well – if necessary add a spoonful of the cooking water – mix everything well and serve.
Note
You can substitute the spinach for some other vegetable such as kale or some broccoli or bimi sprigs that have been previously steamed. Some wild asparagus will also be good for this dish.
