South Bohemian Christmas Soup

One of the regional recipes of our grandmothers for traditional fish soup served at Christmas.

Ingredients:

500 g of pork giblets 100 g of celery 100 g of butter 50 g petrel 50 g carrots 5 pcs carrot heads 20 pcs peppercorns 2 l water piece of whole ginger peas piece of onion salt For the roux: 50 g butter 50 g smooth flour

Procedure:

1. Clean, grate and fry the Vegetable Recipes in butter
2. Pour in water, add peas soaked the day before, ginger, pepper, cleaned onion, fish heads, the rest of the fish meat and cook for half an hour
3. Finally, season the soup and serve immediately.
