Sourdough cheese pastry

ingredients

Cesto

500 g plain flour 500 g semi-coarse flour 200 g cream 100 g butter 4 dl milk 21 g fresh yeast 2 tbsp granulated sugar 1.5 tbsp salt 1 pk baking powder 1 tbsp vinegar 20% (or 2.5 tbsp vinegar 8%)

Filling

220 g smoked cheese

For spreading

1 pk egg oil vegetable sesame seed oil for sprinkling

Delicious, light savoury sourdough with smoked cheese. It’s simple, fancy and most importantly very tasty 🙂 I recommend it to anyone who likes cheese, you won’t regret it!

In one bowl mix both flours, salt, sugar and baking powder. Add the cream, liquid butter, yeast soaked in 3 dl milk and 1 tbsp of 20% vinegar. If you use 8%, you need to add 2,5 tbsp. Add the remaining 1-1,5 dl of milk progressively as needed while working the dough. Make a semi-soft, soft and elastic dough. Knead the dough with a little flour into a loaf and leave to rise for 1 hour.

While the dough is rising, finely grate the cheese and dry toast the sesame seeds 🙂 If you want, you can also put untoasted, but toasted will give the pastry a great taste 🙂 Alternatively, you can use other seeds to taste.

When the dough has risen, roll it out into a large thinner circle. Brush well with oil, sprinkle evenly with cheese and sprinkle with a little salt. Then roll the dough into a roll and cut it into 2 parts. Cover the cut roll with a towel and leave to rest for 25 minutes.

After the time has elapsed, place 1 half of the roll on baking paper. Brush the top and sides with the egg. Sprinkle sesame seeds on the paper next to the strudel and then use the paper to roll the egg-coated side into the paper. This way the sesame sticks beautifully to the strudel everywhere ;-P Finally, brush the remaining bottom (already top) side and roll the paper again in the prepared sesame seeds. Do the same with the other half of the strudel.

Cut the strudel into equal 2 finger thick pieces and lay them on the baking sheet with the paper. Then brush the top with a little egg wash and if you like, you can also add a little salt to the top.

Bake in a preheated oven at 180 °C for about 25-30 minutes. For a better idea of the progress, watch my video 🙂

The pastry is fantastically tasty! It is soft and at the same time slightly crispy on the outside. The smoked cheese adds a fantastic flavour, which the vinegar only enhances with its mild acidity 🙂 You won’t regret trying it! Have a good taste!
