Sour coconut cakes

500 g plain flour 100 g granulated sugar 3 dl milk 3/4 dl vegetable oil 1 pk egg white 21 g fresh yeast 1 KL salt 1 packet vanilla sugar

500 g white yoghurt 200 g grated coconut 2 dl caster sugar 1 packet vanilla sugar

Soft yeasted dough, filled with a soft coconut filling ๐ They are delicious, I highly recommend them.

First we mix our filling. And thatโs so that it will stand while our dough rises. In one bowl, mix together the yogurt, coconut, vanilla sugar and icing sugar. I used 2dl, itโs quite sweet ๐ Mix it all well and let the coconut swell while the dough rises.

For the dough, first mix flour, sugar+vanilla sugar and salt in one bowl with a spoon. Then add egg white, oil and yeast swollen in 2dl milk. Add the remaining approx. 1dl of milk as needed when making the dough. You should get a soft, from semi-soft to softer dough that separates from the bowl. Finally, using a little flour, knead the dough briefly into a loaf shape and leave in a warmer place to rise for about 35-40 minutes.

Cut the risen dough into equal pieces, I made 8 pieces. Then knead each dough again briefly into a small loaf.

From there our coconut filling got a little bit swollen ๐

With the loaves, we immediately go to work without any leavening. Roll the loaf thinner and place the filling generously in the middle-distribute it equally everywhere by eye. You can also add chocolate if you like, I added up to four ๐ Finally, close the dough well, like a classic bun. Place the finished dough with the joined side down.

Place the cakes on a baking tray with the parchment paper further apart and brush them with the egg yolk mixed with a few drops of water.

Without rising, place the cakes in a preheated oven at 190ยฐC for about 25 minutes. Youโd better watch it, because every oven bakes a little differently.

The cakes baked so beautifully ;-P I did crack one, but that doesnโt take away from the taste ๐ The cakes are quite big, this way already baked they are up to 11-12cm in diameter, so if you want smaller cakes, make 10-11 pieces ๐

Slightly warm, sprinkle them with icing sugar to taste.

The cakes are delicious, the dough is soft and light. And the coconut filling is fantastically tasty and smooth ๐
