Soup with leek and salmon

2 tbsp butter 2 pcs leek 1 pk bay leaf 500 g potatoes 1 liter vegetable broth 100 ml whipping cream 150 g smoked salmon to taste salt, ground black pepper a little chives and sour cream for garnish

1. Heat the butter in a saucepan and fry the finely chopped leeks in it. Fry it together with the bay leaves until the leeks are soft. Stir in the diced potatoes and pour in the stock. 2. Cook the soup over medium heat for about 15 minutes, or until the potatoes are completely soft. Then blend it with a stick blender, add the cream and let it come to a boil. 3. Season the soup with salt and pepper and serve. Serve with pieces of salmon, a spoonful of cream and chives.
