Sugo Sauce – Basic Recipe

This Italian tomato sauce forms the basis of many Italian dishes. Sugo is cooked with canned or preserved tomatoes. The basic version of sugo does not include any spices except a little garlic, otherwise sugo is often supplemented with herbs.

Procedure:
1. Heat 2 tablespoons of olive oil in a small saucepan, add a garlic clove cut into thirds, which you will trim
2. When the garlic is slightly brown, add the tomatoes, throw in the broth or salt, cover with a lid and turn the heat down to low, let it bubble, stir just before lowering the heat, then do not stir anymore
3. Leave to cook for about 15 minutes, the sauce should be thick, free of excess water and should not be too acidic, the oil should separate a little from the rest of the mixture at the edges
4. You can serve the sugo in this basic form with, for example, a little Parmesan cheese, or you can further modify it according to the respective recipes.
