With the Filomena storm still raging, supermarkets running out of goods, many people unable to go out and having to cook with what they have at home, it is not time to prepare great dishes, but to dip into ultra-simple recipes that could well be part of a Cocinillas manual of emergency recipes.
Recipes like the soup I’m going to tell you now, for which you don’t need to know how to cook, and for which all you need are ingredients that can be found in any house – in this case, with an egg and some basic seasonings we are going to make a soup to temper the body that will not taste like much – can get us out of some trouble.
This quick egg soup is a very simple soup that is prepared in less than 2 minutes and for which, as I said, you only need practically one egg, so it is perfect for those nights when we want something quick, light and warm and do not want to cook a lot of servings of soup.
It is also perfect as a starter when we are on a diet, as it is a soup that provides the egg protein, it has hardly any calories but fills us so that with a smaller portion of the main course we will be completely satiated.
I can assure you that in the time I’ve been talking about this quick egg soup recipe I would have had time to make the soup, to eat it, to scrub the little that gets dirty when making it and even to have some dessert. Because it really doesn’t even take two minutes.
Since it’s all about making the most of what you have at home, I’m going to propose two versions.
The first one, which I learned to make from my mother, she called it “gazpachuelo” because it is a very but very simplified version of gazpachuelo malagueño.
The second, is inspired by the egg soups of Chinese restaurants, that surely sounds more familiar to you
.In any case, it is a homemade soup that takes less time to prepare than a sachet soup and can be made with homemade broth that we have made in advance and have in the freezer, or with water or, if you prefer, with a stock cube.
How to make an egg soup in two minutes

Ingredients
For gazpachuelo-style egg soup
. Egg, 1 Vinegar or lemon juice, 1 tbsp Extra virgin olive oil, 1 tbsp Water, 300 ml Salt
For the Chinese style egg soup
. Egg, 1 Soy sauce, 2 tablespoons (or miso paste) Sesame oil, 1 teaspoon (optional) Ground pepper, to taste Water, 300 ml Herbs (parsley, chives, cilantro, …)
For the gazpachuelo style soup we will need a deep dish, a bowl in which we will serve the soup, a microwave-safe bowl, stirring rods and a spoon.
Step 1
Grease the bowl with a few drops of extra virgin olive oil and crack the egg into it.
Step 2
With a soup spoon, take the yolk, transfer it to the other bowl and add a pinch of salt.
Step 3
Add a tablespoon of extra virgin olive oil and a tablespoon of vinegar and beat well with the whisk.
Step 4
Heat the broth for 40 seconds in the microwave at 800 W, it does not have to boil. While the broth is heating, beat the egg white with a little salt.
Step 5
Remove the broth from the microwave, and put the egg white in for 50 seconds at 800 W so that it curdles. Cut the egg white curd into thin strips.
Step 6
Add the broth little by little over the egg yolk mixture while whisking. Chop the egg white curd and add it to the broth. Rectify the salt if necessary.
For the Chinese style soup we will need a saucepan, a bowl in which we will serve the soup, a bowl to beat the egg and a spoon to stir the soup.

Step 1
In a saucepan we heat the water to bring it to temperature but without boiling.
Step 2
Meanwhile we beat the egg in a bowl with a pinch of salt. It is important that it is very well beaten completely mixing the yolk with the white.
Step 3
Remove the pan from the heat and add one or two tablespoons of soy sauce or a tablespoon of miso paste, a teaspoon of sesame oil and a little ground pepper. Mix well and, if necessary, correct the salt and pepper.
Step 4
Add the beaten egg to the hot broth in a trickle while stirring the broth with a spoon.
Step 5
Serve immediately with some chopped aromatic herbs on top.
