One of the options for thickening soups.
Ingredients:
Procedure:
1. Whisk the eggs, sour milk and flour until smooth
2. Add a thin trickle to some of the hot soup water, stirring constantly
3. Heat and bring evenly to the boil, stirring constantly
4. Remove from heat and add another part of the soup water at once, stirring constantly
5. Add the finished roux to the soup in a steady stream, stirring constantly.
