Ingredients
– 500 grams blackberries
– 180 grams ricotta
– 120 grams sugar
– 70 grams white almond puree
– 3 eggs
– 120 gram flour
– 1/2 sachet yeast
Preparation
Preheat the oven to 180°C.
Separate the yolks from the egg whites.
Put the egg whites in the bowl, put the whisk and whip them to snow with a pinch of salt 5s vit 4 then 5 min 50°C vit 3,5. Set aside.
Put in the bowl the egg yolks, sugar and almond puree mix 1 min vit 3.
Add the ricotta yeast and flour and restart 1 min vit 3 the dough should be quite smooth.
Mix the snow whites with this preparation then gently incorporate the blackberries. Put in a mold and bake 40 min.
