Snowflake: a light, cheesy dessert
ingredients
120 g plain flour 4 pcs eggs 120 g powdered sugar 1 packet vanilla sugar 1 packet baking powder 1 pinch salt cocoa or grano for sprinkling

250 g full-fat soft cottage cheese 120 g caster sugar 1 packet vanilla sugar 250 ml whipped cream

This dessert is so perfect that you will surely bake it for your Sunday coffee or celebration. This recipe was given to me by a friend who used to make it often. It was also on the internet but I can’t find it one lucky I saved it.

I whisk my eggs with sugar until frothy. I mix the flour with the baking powder and vanilla sugar and a pinch of salt separately. Then I progressively add it to the foam of eggs and sugar.

I line a 20×30 baking sheet with parchment paper and brush lightly with oil. I bake the shell for 10 minutes at 200 degrees.

Cream: I mix the cottage cheese with the sugar, separately I whip the cream. Finally, I mix the cream with the cream cheese. I cut the crust in half after baking. You can trim off the unsightly edges.

I spread the filling on one slice, cover with another slice and spread the rest of the filling on the top with a knife. Sprinkle with cocoa, I’ve tried mixing cocoa with granola, but regular Dutch cocoa will do. I leave it in the fridge to set properly.
