Smoked salmon soup

Smoked salmon soup gets its delicious flavour from the classic combination of sweet and savoury. Sweet leeks and salty cold smoked salmon. This is the nobility of everyday life. A glass of good white wine on the side.
Ingredients for six
200g cold smoked salmon (with a little smoke) 1 kg potatoes (whitefish is a good choice);) 1 leek 200g celeriac 50g butter 1 clove of garlic 1/2 tsp white pepper 2 tsp salt 1 tsp sugar 1 litre of drinking milk a bunch of dill: A splash of dry sherry or white vermouth adds a wonderful flavour to smoked salmon soup. Chop the white part of the leek into small pieces. Soften the leek fragment in a saucepan with butter and chopped garlic. Season with salt, sugar and white pepper. Peel and chop the potatoes. Add enough water to the pan to just cover the potatoes. Cover with lid and turn down to a simmer. Chop the celeriac into small dice. Add to the soup. Simmer the vegetables under the lid until soft. Add the milk and bring to the boil. Chop the dill and smoked salmon and add to the soup. Remove the saucepan from the heat and leave the smoked salmon soup to simmer under the lid for half an hour.
