Smoked Fish Soup by Radek Kašpárek

The soup is very tasty, delicious and slightly spicy after capers and lemon. I was inspired by Radek Kašpárek’s soup in Gurmet.

Ingredients:

150 g of smoked salmon 150 g of smoked trout 100 g of butter 500 ml chicken stock 100 ml cooking cream 2 pcs of pepper 2 pcs carrots 1 pcs onions 1/2 pcs of lemon 1/4 pcs of celery 1 tsp capers pepper salt For croutons: 3 pieces of toasted bread 3 tbsp garlic oil

Procedure:

1. Cut the onion, 1 carrot, 1 parsley and half the celery into small cubes and fry in some of the butter until golden
2. Peel the lemon and chop it together with the capers and add it to the sautéing Vegetable Recipes, sauté together for a while
3. Cut the salmon and trout into larger pieces (leave part of the trout for decoration) and add to the vegetable base, fry for a while and then pour in the broth, let it come to a boil and simmer slowly for 20 minutes
4. Use a stick blender to blend until smooth and strain through a sieve if necessary (not necessary), season with salt and pepper
6. Use a julienne peeler or cut into fine noodles with a knife and sauté in the remaining butter
