Old recipe from Silesia. It is a poor man’s dish, very simple recipe for potato preparation. Potato pancakes prepared according to this recipe were dried on the stove without using fat. The recipe is the original recipe, today it is improved with flour and egg.

Ingredients:

1 kg of floury potatoes salt Other: baking paper, lard for spreading

Procedure:

1. Grate the potatoes finely, squeeze the water out of them into a glass and set it aside
2. After an hour, drain the water, starch will settle on the bottom, add it to the potatoes, add salt to the mixture, stir
3. Form small thin patties, which we straighten on a baking tray lined with baking paper and dry in the oven, occasionally turn the patties

Recommendation:

A proper stryk must be crispy, elastic in consistency, not too dry.

The pancakes were eaten alone or smeared, with goose fat, eaten with mushroom sauce, sour cream, duck stock, etc. Today they are often served with meat dishes as a side dish.
