Skyr soda bread

450 g plain flour 1 KL baking soda 1/2 KL salt 300 ml Skyr natur 80 ml water

Preheat oven to 190°C. Put the flour, salt and baking soda in a bowl, mix everything with a fork. Pour the Skyr, water over the mixture and mix everything quickly and thoroughly until a dough forms. If necessary, a little flour can be added to stiffen the dough. Turn the dough out onto a lightly floured rolling pin and roll it out by hand for about half a minute. Place the dough in a low loaf shape on a pre-greased baking tray and use a knife to make two X-shaped cuts on the surface of the dough. Bake the bread for about 45 minutes, then let it cool for a few minutes, wrap it in a slightly damp tea towel and wait until it has cooled completely. It can then be sliced and served.
