Sirloin Cutlets “Metternich”

Minute of sirloin.

Ingredients:

600 g of sirloin 200 g of mushrooms 200 g rice 80 g butter 1 pk truffles (you can use an extra 50 g mushrooms) 2 pcs of tomatoes 4 tbsp cream ground pepper salt

Procedure:

1. Pour 3 dcl of water, salt, and simmer under a lid until the rice is tender
2. Slice the candlenut into 8 thin slices, de-blanch them, gently tap them (preferably with a closed fist), salt and pepper and lightly fry on both sides in hot butter
3. Remove the slices, sauté the sliced mushrooms in butter and pour the cream over the soft ones and bring to the boil
4. Stir the soft rice with a meat fork and use a ladle rinsed with cold water to form 8 scoops, cover them with the slices and pour the mushroom sauce over everything.
