Simple sponge cake with sugar glaze

3 pcs egg (L or 4 M’s) 4 tbsp granulated sugar 1 packet vanilla sugar 50 g butter 2 tbsp water 4 tbsp plain flour (mounded) 1.5 KL baking powder 1 pinch salt homemade jam (apricot, peach, strawberry, …)
Sugar glaze
2 tbsp lemon juice 150 g icing sugar

When you don’t have the ingredients for a cake, it’s easy to conjure up some goodness from your regular stash. For example, this soft cake with white icing.

Whisk the whole eggs with the granulated sugar and vanilla sugar until frothy.

Add melted butter cooled with two tablespoons of water.

Then sift the flour, baking powder and salt into the mixture and stir lightly with a fork.

Pour the batter into a 24 cm diameter cake tin, the bottom of which is lined with baking paper.

Bake in a preheated oven at 180°C for about 25 minutes.

Let the baked cake cool on a wire rack and then cut it lengthwise into two circles.

Spread the bottom slice generously with homemade jam and attach the top slice.
8.
Then whip the lemon juice and sugar icing. It should be semi-solid so that it spreads easily, but at the same time so that it doesn’t melt.
9.
Place the icing in the centre of the cake and slowly spread evenly towards the edges.
10.
Serve with coffee or hot tea.
