Simple Spanish omelette with potatoes, eggs, onions and herbs

1 tbsp olive oil 1 tbsp butter 1 pk onion (sliced thinly) 2 pk cleaned raw potatoes 5 pk egg 2 tsp parsley (chopped) salt, black pepper, pinch of cayenne pepper

Simple Spanish “Tortilla de patatas” recipe for an omelet that is delicious as a side dish, stand-alone meal or breakfast. It’s quick to make and you can add anything to it, such as sautéed mushrooms or bacon.
1.
Heat the olive oil and butter in a frying pan.

Cut your onions and peel your potatoes.

Add the onions to the pan and fry them until pink. Meanwhile, grate or thinly slice your potatoes.

Add the potatoes to the sautéed onions and sauté together for 3-4 minutes.

In a bowl, mash with a little parsley, salt and pepper.

Stir the onion-potato mixture into the eggs.

Pour the omelette mixture into the pan in which you sautéed the onions and potatoes. Bake for 3-4 minutes.
8.
Turn and fry the other side.
9.
Decorate with parsley and serve.

This time we had grated radish marinated in rice oil and tossed with a drizzle of olive oil to go with the omelette. A very fresh and colourful addition to many dishes. Enjoy!
