Simple sourdough dumplings

500 g coarse flour 1 tbsp salt 1 pk egg 1 tbsp sugar 1/4 liter lukewarm milk 30 g yeast to taste poppy seeds, breadcrumbs, nuts…

Prepare the sourdough starter. Drain about 1/2 of the warm milk, add yeast, sugar and wait for the starter to form. Then add flour, egg, remaining milk, salt and let rise.

Place the dough on a floured board, divide into 4 loaves and let stand for 15 minutes. Shape into dumplings and place in boiling water, reduce heat and cook for 20 minutes. Do not turn during cooking.

The cooked dumplings can be sprinkled with poppy seeds, toasted breadcrumbs or ground nuts.
