Sicilian Tomatoes
A warm appetizer of tomatoes, anchovies, capers and olives.
Ingredients:
Procedure:
1. Cut the tomatoes in half and hollow out the insides
2. Cut the olives in half, drain, leave eight halves for garnish and finely chop the rest
3. Fry the finely chopped onion in oil, add breadcrumbs, finely chopped anchovies, chopped parsley, olives, capers and mix well
4. Fill tomato halves with the mixture, garnish with olive halves, arrange in a greased baking dish, season with salt and bake in a moderately heated oven (170 °C).
