Sicilian Baked Fish

Recipe for preparing fish meat baked in the oven together with a vegetable mixture.

Ingredients:

Ingredients for 4 people: 4 pcs portions of any fish 2 pcs of scallops 1 pcs of tubes 8 pcs green olives 300 g of tomatoes 1 tbsp finely chopped parsley 1 tbsp capers a small piece of celery pepper salt

Procedure:

1. Arrange the skinned portions of fish in a single layer on a greased shallow fireproof dish
2. Fry the finely chopped onion in oil, add the stewed, peeled and sliced tomatoes, cloves, salt and stir occasionally to mash them
3. Stir into the tomatoes the drained, finely chopped olives, capers, parsley, finely chopped celery and pepper
4. Arrange the mixture over the fish and bake under a lid in a medium oven for about 25 minutes
5. Serve the fish very hot.

Recommendation:

Supplement: Boiled rice or mashed potatoes and vegetable salad.
