Shrimp soup
A quick everyday meal or a starter for a party. Shrimp soup gets a subtle flavour from the lobster fund and the tuna.
Ingredients for four
300 g frozen prawns 2 potatoes 1 onion 2 dl cream 1 tsp tomato puree 1 tsp tomato paste 1 tbsp.1 teaspoon salt 1/2 teaspoon white pepper 1/2 lime 1 tbsp butter 1 tbsp butter dill
Shell and chop the onion. Peel myös potatoes and chop finely.
In a saucepan, add butter. Cook the onion slices until sweet. Add the potatoes to the saucepan.
Place a litre of water in the saucepan and bring to the boil over a high heat. Season with tomato puree, salt, white pepper, lime juice, thyme and lobster stock.
When the potatoes start to soften, remove the tuna, add the prawns and bring to the boil.
Use a hand blender to blend the soup until very smooth. Add the cream and bring to the boil again. Season the shrimp soup with dill and serve immediately hot with good bread.
