160 g pre-cooked prawns 2 tbsp white wine 1 tbsp lemon juice 1 pinch thyme to taste salt, ground black pepper 4 dark wholemeal bread 4 lettuce leaves 1 pk tomato 2 tbsp mayonnaise

1. Boil the prawns in water with wine and lemon juice. Drain and blanch the prawns in 10 minutes to get rid of excess liquid. 2. Place lettuce leaves, tomato slices, a spoonful of mayonnaise and prawns on one slice of bread. Season with thyme, salt and pepper and add the other slice of bread.
