Shredded chicken in crockpot recipe

This is the best shredded chicken in crockpot recipe that I have tried. The chicken comes out so moist and shreds easily. I have used this recipe for tacos, burritos, and enchiladas and it has turned out great every time. I highly recommend using chicken breast for this recipe as it is the easiest to shred.
Ingredients:
4-6 chicken breasts
1 onion, diced
1 green pepper, diced
2 tablespoons chili powder
1 tablespoon cumin
Salt and pepper
2 cans Rotel tomatoes
1 cup chicken broth
Instructions:
Place chicken, onion, green pepper, chili powder, cumin, salt and pepper in the crockpot.
Pour in Rotel tomatoes and chicken broth.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Remove chicken from crockpot and shred with a fork or chop in small pieces.
Return chicken to crockpot and stir until mixed well.
You can use this shredded chicken in tacos, burritos, enchiladas, on salads, or in quesadillas. It is also great as a fireside meal served with rice and beans. For a healthier option, you could use whole wheat tortillas. Tips: If you want a little more flavor, you could add a tablespoon of garlic powder or an extra can of Rotel tomatoes. For a milder flavor, you could use mild Rotel tomatoes.
