Shakshuka with eggplant and goat cheese

Shakshuka (or shakshuka) is a traditional breakfast dish originating from North Africa, which has its firm place on the tables of Arab countries as well. It is no longer an unknown dish in the Czech Republic either and is becoming a popular choice for Sunday brunch. If you too are enchanted by the exotic shakshuka, you can spice it up with salty Bon Lait goat cheese, which adds a new dimension.

Ingredients:

Porce: 4 1 package of Bon Lait goat cheese 1 can peeled tomatoes 4 pcs of garlic cloves 4 pcs of egg 1 pk medium onion 1 pk red bell pepper 1 pc smaller eggplant 1 handful head parsley 1 handful of cilantro 2 tsp sweet ground pepper 1 teaspoon ground cumin 1 teaspoon ground cumin chili pepper olive oil pepper salt

Procedure:

Cut your eggplant, bell pepper and onion into small squares.

In a heavy-walled pan, heat the olive oil, saute the garlic and let it infuse for a few seconds. Then add the chopped Vegetable Recipes, let them turn golden, add the spices, salt and pepper and sauté.

After two minutes, add the tomatoes and let everything bubble for about 5 minutes.

Next, make a well in the quarters of the mixture with a scoop, in which you knock the egg. Put the chopped or crumbled goat’s cheese on top, cover with a lid and cook for 5-8 minutes until the eggs are done the way you like them.

Sprinkle the cooked shakshuka with chopped herbs and season with freshly ground salt and pepper.
