Shahi paneer

Shahi paneer is a creamy, succulent dish made with Indian home-made cheese. Its luscious and gentle sauce is given a wonderful sweet flavour thanks to cashews and almonds.
Ingredients for six
200-250g paneer cheese (firm, home-made cheese with myö 1 dl almonds 1 red onion 1 green chilli 1 tbsp garam masala 1 tbsp jeera 1 tomato 1 dl water
Start making the shahi tahna: Lämmitä pan and add ghee. Peel and chop the red onion in the pan. Pour in the myös pöhkin and almonds. Remove the chillies from the stems. Cut the chilli in half and add to the mix. Fry for a moment to soften the onion.
Dice my tomato into the pan and season with jeera and garam masala. Fry until the mixture starts to mix. Remove from the heat, add cold water and blend with a hand blender until very smooth. Set the paste aside for a moment.
Add the ghee and garlic + ginger to the pan. Season with pepper. Let the flavours separate for a while.
Add the shahi tahna back to the pan. Add the cream. Bring to the boil. Add the saffron at this stage.
Stir the yogurt into the pan and dice myös paneer cheese into the sauce. Allow to simmer for a moment and pour into a serving dish.
Garnish the shahi paneer with coriander leaves and serve immediately.
Serve immediately.
