Secreto or pork belly

Secreto is a “secret” piece of pork with a nice, fatty pork shoulder. The bone-in part is made to be flame-grilled. With the right tilpehs, the dish is like a trip to the Spanish sun.
Ingredients for four
600g pork secreto 2 teaspoons olive oil 1 teaspoon salt 1 teaspoon black pepper
Leave the meat to stand for an hour before cooking. Drizzle with olive oil and season throughout. Leave to season.
Secreto is at its best when grilled on the flame. In other words, grill over a good fire / charcoal, put the tongs on the grill and grill the pork.
After a while, the fat starts to drip and the flames rise. Cook in a circle for 15 seconds. If the flames get too high, move the pork to the side for a moment.
The idea of grilling on the grill is to get the surface of the meat crispy quickly and the inside just barely cooked. It takes no more than five minutes at most to cook a thin cut of meat. Practice makes perfect.
After grilling, place the pork secreto in foil for a moment to rest.
Thinly slice and serve with a worthy accompaniment.
