Scrambled Eggs with Eggplant

Sliced onion with crushed garlic fried in oil, then added eggplant cubes, covered with a little water and simmered until tender, then all salted, peppered, covered with beaten eggs and scrambled until thickened.

Procedure:
1. Peel the eggplant, remove any seeds and cut into cubes
2. Then peel the onion and garlic cloves, finely chop the onion and crush the garlic
3. Heat the oil in a large pan, add the chopped onion and crushed garlic and fry, then add the eggplant cubes, fry, cover with a little water and simmer until the eggplant cubes are soft
4. Then pepper the soft eggplant, add salt, pour the beaten eggs and stir until the eggs are stiff
5. Serve the finished scrambled eggs with eggplant sprinkled with parsley, for example with a slice of bread.
