Scallops on a bed of leeks in Thermomix
Here is the recipe for scallops on a bed of leeks with Thermomix, a delicious dish of scallops and leeks topped with a creamy white wine sauce, dedicated to foodies and gourmands, ideal for your holiday meals.
Ingredients:
16 scallops 300 g leek whites 25 g butter 3 shallots 3 tablespoons fresh cream 300 g dry white wine 50 g water 20 g cornstarch salt, pepper
Preparation:
Wash then cut the leeks into small pieces then set aside in the varoma.
In the bowl put the shallots in the bowl then chop for 5 seconds on speed 7.
Add the butter then set 2 minutes at 100° on speed 1.
Add the white wine, water, salt and pepper then insert the varoma with the leeks then set 13 minutes varoma on speed 1.
At the buzzer stir the leeks then insert the varoma tray with the scallops then set 5 minutes varoma on speed 1.
Turn the scallops over and set the varoma to speed 1 for 3 minutes.
When the bell rings, remove the varoma and add the cream and cornflour to the bowl and set the speed to 4 for 5 minutes at 90°.
Arrange a bed of leeks on the plates, then place the scallops on top and cover with the white wine sauce.
