Saxon chicken in beer sauce

A very easy and delicious casserole. You can buy frozen sausage from the market, but you can also buy venison or reindeer.
Ingredients for four
750g venison (frozen) 200g jam onions 30g butter 2-5 tsp sugar Dark Czech beer (e.g. Kozel) salt and pepper
Heat the butter in a cast iron pan. Brown the minced meat and season with black pepper.
Add the jam onions, half the stock and 2 teaspoons of sugar. Fry for a couple of minutes. Pour the beer into the pot and simmer on the stove under the lid for an hour. Taste during the brewing process. Add sugar (usually 1-3 tsp).
The sauce is ready when the liquid is very dark and syrupy.
